Armini Salumi

Panera is a precious meat cut. An adult pig weighing about 150 kg contains only 700 grams of panera.

After thirty years of experimentation and acquiring direct knowledge of this precious raw ingredient, we firmly believe that panera from Suino pesante pigs that were born, raised and bred in Italy is the best cut for making salami. Also known as “trito di banco” (lit. “counter mince”), panera is a precious meat obtained from the striated muscle that proceeds from the belly towards the thigh. Right from the beginning, panera presents the right balance between red meat and noble fat, the pancetta, which are the essential ingredients of all our salamis.

Soft and delicate, it has no veins and is very “dry”: these characteristics make it perfect for mincing, stuffing and aging to make salamis with outstanding texture and taste.

Origins matter

The panera we use in making our salamis comes exclusively from Italian breeding farms. We only select Suino Pesante Italiano pigs that are meant for the production of prosciutto crudo: this high-quality breed is renowned even at the European level. The Suino Pesante Italiano is the perfect breed for making cured meat: it is slaughtered after one year, when it has reached a heavy weight and the right maturation of the meat compared to a much lighter pig, which is slaughtered at 6 months and is intended for fresh meat.

Red like meat, white like noble fat

Good salami has two colors. Red lean meat exclusively from the precious panera of Suino Pesante Italiano pigs. And white fat, the solid and noble one. We select the compact and flavorful pancetta found next to the panera. We finely mince and stuff it according to a simple and flavorful recipe that ensures a well-balanced taste. Because salami must taste like salami, not spices.
