The right recipe begins by selecting the raw material, on which we do not compromise: we only use panera from Suino pesante pigs that were born, raised and bred in Italy and destined for the production of prosciutto crudo. The best sounders give the tastiest meat and the noblest pancetta, which we combine according to a basic recipe: mixed with good salt and pepper, because real salami must taste like salami, not spices.
